Mini Meatloaves

Meatloaf was always that classic comfort food mom used to cook for a nice dinner. For a family of four, it was easy to make a whole loaf and have a few leftovers of it to eat throughout the week. But since it’s just J. and me in our house, a whole meatloaf just seems wasteful. Thus, the mini meatloaf came to be – a nice individual portion with the great flavors and crisp exterior we love.

Mini Meatloaves

  • 1/3 cup chopped onions
  • 1 TBSP minced garlic
  • 1/4 cup Italian seasoning
  • 3 TBSP milk
  • 2 TBSP A1 sauce (or Worcestershire)
  • 1/2 cup panko breadcrumbs
  • 1 egg yolk
  • 1 TBSP dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3/4 – 1 lb of ground turkey (or ground beef)

Ketchup Glaze

  • 1/4 cup ketchup
  • 2 tsp cider vinegar
  • 2 tsp light brown sugar

Pre-heat the oven to 350 degrees. Mix up the glaze ingredients in a bowl and set aside.

On a oven-friendly skillet, cook down the chopped onion, garlic, and Italian seasoning. Once cooked down, transfer to a bowl and add in the breadcrumbs, A1 sauce, yolk, mustard, salt, and pepper. Add the raw ground meat and mix up all ingredients.

Divide the meat in half and create 2 little oval loaves (like burgers but more oval and not as flat). On your oven friendly skillet, sear both sides of each loaf to create a nice crust (about 3 minutes per side).

Brush meatloaves with the ketchup glaze and bake for about 20 minutes until the ketchup has developed a nice baked crust on top (the best part in my opinion!)

I served mine with mashed potatoes. The crispness of the meatloaf paired great with the creaminess of the potatoes. I loved making mine with turkey as it wasn’t as greasy as with ground beef. The mix of savory seasonings with the sweet ketchup glaze on top will transport you back to Sunday night dinners with your family. And a one skillet meal makes it a very easy clean up as well!
